Moist silky smooth milk pudding is not for anyone; especially if you are lactose-intolerant or just shun dairy products in general.
Make that a Double Boiled Milk Pudding (or double steaming) and you will have anyone with lactaphobia running in the opposite direction (that's the term Wiki told me about anyone who's afraid of dairy products, or milk in general).
*Double boiled, or double steamed is a Chinese cooking method usually associated with nutritional products (especially soups, ginseng, bird's nest, etc) whereby the food subject is placed in a jar made of clay/ceramic filled with water, which is then covered with a lid and the ceramic jar is then put to boil or steam for several hours.
This is a traditional and one of the most popular methods of preparation which encapsulates the nutrients of the food product within and not lost through the moisture or vapor that escapes during the cooking duration. It is often used to ensure the food maintained its natural contents of essences; especially for expensive herbal and nutritional food consumed to promote well-being of health and beauty.
The term Double boiled can be quite confusing for some unfamiliar to the term or even the varieties of Chinese cooking methods.
Some may conclude that the food is boiled for two hours, or boiled again after it is cooked, or just that there is an extra layer/film above the food.
It is just a common perception; after all, the term did indicate double boiling, of some sort.
Double Boiled/Steamed Milk Pudding is a signature and a legendary pride of Yee Shun Milk Company which shot to fame with their simple yet captivating fare made of fresh milk.
Starting from its humble beginnings in Macau, Yee Shun Milk or Dairy Company is known for their fresh dairy (milk) which then flourished into a dessert house with Three outlets in Macau alone and has expanded their business to Hong Kong island where they have Four outlets to date, in the selected bustling districts in the heart of the city.
The allure of Yee Shun Milk Company, many may wonder?
It is just silky smooth and aromatic milk pudding which bursts with that milky goodness in the mouth.
That is, if you are a fan of milky/dairy stuffs.
They come in different toppings, to accompany and to add variety to entice their patrons even more.
From Red beans to lotus seeds, mung bean and ginger, one would be spoilt for choice when deciding on that bowl to try out, especially for the first time.
Furthermore, there is only so much space one could possibly have in the stomach.
Their bestsellers would probably be the Original version of the Milk pudding; yes, just plain Milk Pudding, the Red Bean Milk Pudding, Lotus Seed Milk Pudding and also the Milk Pudding with Ginger juice.
To be frank, I am not a huge fan of dairy though not to the extent of phobia; well, close enough.
I am even lactose intolerant, but I was just intrigued with the fame that I hopped into the shop for a quick pit stop after hours walking on the street.
Double Boiled Milk Pudding with Lotus Seeds (HKD$25)
To be honest with you, I am really not your best guide or judge to tell you about this milk pudding.
All I can say is that the milky aroma and taste, are just too overwhelming for me, though I don't think it will bother milk lovers or dairy fans.
For that, I can definitely vouch for the rich luxury of the milky goodness and that calcium-packed bowl of pudding in one serving.
It was smooth alright; I did take a slight risk to try this though with much help from the other half.
An average kick of milk density (not too dense or overpowering for most), with that smooth texture of the pudding which testified to that allure this bowl of milk pudding has and the reason for its large fan base (not just locally, even tourists who have tried it proclaimed their love for it).
The lotus seeds were more of complements to the pudding though it did not do much to enhance the flavors or give it that extra kick.
I am not a fan, but again, as I have mentioned, I am just not your best judge, so I will just leave the photos to do the talking.
That's more just and right.
This is the second time I have been to Yee Shun actually; with my first visit to their original outlet in Macau a few years back, on my first ever trip to Hong Kong.

Then again, what do I really expect when I order this in a place where they call themselves a Milk Company?
*slaps my own forehead*
It is really all Milk over here, so if you are really not a fan of anything dairy or milk, this is definitely not for you or you may faint from the rush of milky aroma and sight everywhere.
If you belong to the majority of the population who (are normal) and adore (or worship) milk and dairy based products (you are probably healthy and loaded with calcium in your bones and teeth), then this is just the place for you.
This is indeed a Milky Heaven.
Pssst, ladies, I heard that Double Boiled Milk Pudding is really good for a fair complexion and in general beautiful skin!
Darn, now I know why I don't have gorgeous skin :-P
